Origin: New Guinea
Distilled part: Seed
Botanical family: Grasses
Main constituents: Vanillin, vanillic acid, aldheyde p-hydroxybensoic.
Uses: Helps to the digestion and relieves feeling bloated. Relaxing.
In cookery:
Add 2 to 3 drops, according to the recipe, at the end of cooking of your culinary preparations.
Generally, count 1 drop by portion (person) or 2 drops for more steady flavors.
All which is powder, as the cinnamon, cardamom, the cumin, ..., gives a sweeter and more "powdered" flavor, it is evident. A cake with cardamom or with the cinnamon in powder gives a very "stable" tasting, the flavor is present nonstop.
In the form of essential oil, the concentration is such as the aromatic notes are more complex, the flavor is denser, more colored. A drop added in a cake gives a tasting which flies away, the flavor of the essential oil modulates as the preparation is cold or warm, it is growing and opens more olfactive doors.
Mixed in vegetable oil, essential oil and essences become much easier to use in the cookery. It is more convenient to manipulate them under this shape. For desserts which ask for a lot of sharpness, we can choice an vegetable oil as that of the sweet almond (but you should not make warm). |
